Old-Fashioned Ginger Tart

Ingredients:

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 1 egg yolk
  • 1-2 tbsp cold water

For the Filling:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup dark brown sugar
  • 1/4 cup golden syrup or molasses
  • 1 cup heavy cream
  • 2 large eggs, beaten
  • 4 tbsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/4 cup crystallized ginger, finely chopped

For the Topping (optional):

  • Whipped cream
  • Additional crystallized ginger, for garnish

Instructions:

Prepare the Crust:

  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, combine flour and sugar. Add the butter and pulse until the mixture resembles coarse crumbs.
  3. Add the egg yolk and 1 tbsp of water. Pulse until the dough just comes together, adding more water if necessary.
  4. Press the dough into a 23cm Aluminum tart pan, evenly covering the bottom and sides. Refrigerate for 30 minutes.

Bake the Crust:

  1. Prick the crust with a fork, then bake for 15-20 minutes until lightly golden. Remove from oven and let cool slightly.

Prepare the Filling:

  1. In a mixing bowl, cream together the butter and brown sugar until smooth. Stir in the golden syrup or molasses.
  2. Gradually mix in the heavy cream, followed by the beaten eggs.
  3. Add the ground ginger, cinnamon, nutmeg, salt, and crystallized ginger, mixing until well combined.

Assemble the Tart:

  1. Pour the filling into the pre-baked crust.

Bake the Tart:

  1. Bake for 30-35 minutes or until the filling is set but still slightly wobbly in the centre.

Cool and Serve:

  1. Let the tart cool completely. Serve at room temperature or chilled.
  2. If desired, top with whipped cream and garnish with additional crystallized ginger.
