Fig and Three Cheese Tart Recipe

Ingredients:

For the Crust:

  • 1 1/4 cups all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 2-3 tbsp ice water

For the Filling:

  • 1 cup cottage cheese
  • 1/2 cup blue cheese, crumbled
  • 1/2 cup pecorino cheese, grated
  • 2 large eggs
  • 1/4 cup heavy cream
  • 2 spring onions, finely chopped
  • 1 tbsp fresh thyme leaves
  • Salt and pepper to taste

For the Topping:

  • 4-6 fresh figs, sliced
  • Honey, for drizzling
  • Extra thyme leaves for garnish

Instructions:

Prepare the Tart Crust:

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine flour and salt. Add cold butter and mix until the mixture resembles coarse crumbs.
  3. Gradually add ice water, stirring until the mixture forms a ball. Flatten into a disk, wrap in plastic, and refrigerate for 30 minutes.
  4. Roll out the dough and press it into a 23cm aluminium tart pan. Refrigerate for another 15 minutes.

Bake the Crust:

  1. Line the crust with parchment paper and fill with pie weights or dried beans.
  2. Bake for 20 minutes, remove weights and parchment, and bake for another 10 minutes until golden. Let cool.

Make the Cheese Filling:

  1. In a bowl, combine cottage cheese, blue cheese, and pecorino cheese. Mix in eggs, heavy cream, spring onions, and thyme. Season with salt and pepper.
  2. Pour the filling into the cooled crust.

Bake the Tart:

  1. Bake for 25-30 minutes, or until the filling is set and slightly golden.

Add the Fig Topping:

  1. Arrange sliced figs on top of the baked tart.
  2. Drizzle with honey and garnish with extra thyme leaves.

Serve:

  1. Let the tart cool slightly before slicing.
  2. Serve warm or at room temperature.
